Quick Share: Mozzarella Meatballs with Spaghetti Recipe

An easy to make, authentic dish which will happily fill any kind of appetite. Got a bit more to it than a typical meatball dish thanks to the addiction of the sauce which gives it an extra twist!

Ingredients:

For the meatballs
  • 500 g minced beef
  • 50 g fresh breadcrumbs
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • handfuls of fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 75 g mozzarella
  • 3 tbsp rapeseed oil
For the sauce
  • 1 small onion, diced
  • 2 roasted red peppers, (from a jar)
  • 2 tbsp tomato purée
  • juice of 1 oranges
  • 200 ml beef stock
  • 1 tbsp balsamic vinegar
  • 50 g stoned green olives, sliced
  • spaghetti, to serve


Method

1. For the meatballs 

2. Mix the minced beef with the breadcrumbs, garlic, seasoning, parsley and oregano. 

3. Mix well with damp hands and make 10-12 balls. 

4. Cut the mozzarella into 10-12 chunks. 

5. Flatten each meatball and press a piece of mozarella into the centre. Gather the meat around it and pinch to make sure it is sealed. 

6. Heat the oil in a large frying pan and fry for around 10 minutes, turning occasionally. 

7. For the sauce Fry the onion in the pan juices until softened. 

8. Add the tomato puree, orange juice, stock and vinegar. 

9. Bring to the boil, then using a hand blender, puree the sauce a little. 

10. Return the meatballs to the pan and simmer for 25 minutes until cooked through. 

11. Just before serving add the olives. 

12. Serve with spaghetti.

Barbra Streisand "Back To Broadway" at the O2 Arena June 3rd 2013


It is incredibly rare infact almost impossible to find an artist in the world with nothing to prove to anyone. I have asked myself this question and searched the darkest corners of my mind and only 1 name appears. Her name is Barbra Streisand , the original Brooklynite with a voice as big as universe a sound as effortless and perfect as the rising sun. Even after all these years she could out sing any singer, at the age of 71 her voice is a little different, more mature but can still pull at your heart strings as if the words of the music were written by Cupid himself. 


The sell out crowd at the 02 arena in Grenwhich were treated to classics such as My Man,  Don't Rain On My Parade and even a little bit of Woman In Love. With hard core fans paying up to £500 per ticket she was in a safe zone to play less well know numbers to satisfy the audiences all knowing and undying love including People from Funny Girl and On A Clear Day. During the evening the stage was shared with Streisand's sister Roslyn Kind and her son Jason Gould, both naturally had fantastic voices and they did blend into the set. However with the average ticket price of the evening being £250 it was obvious who the audience had come to see and though Barbra was happy to share up to half an hour stage time with them, the audience were a little less enthused.
That didn't overshadow the rest of the evening as Miss Streisand relaxed into the mood despite claiming to suffer form terrible stage fright. She is first and foremost an actress and she uses the talent so beautifully after all the fame and countless accolades she is still that funny, jewish misfit from New York, her east coast twang stronger and more charming then ever. 
Throughout the evening various stories form her life were shared which had the audiences eating out of the palm of her hand.the pain that she expresses through her voice in certain songs could be mistaken for a heartbroken teenage girl with a particular tenacity for show tunes . This is what makes her such a legendary performer because it feels like no other can do it like she can, when you compare her to some of our current day "stars" like Rihanna my heart just breaks for the young girls of our generation who may never have their heart fixed by the comforting tones of Barbra's voice. 

After a 3 hour long set filled with emotional tributes to the late Marvin Hamlisch, her Mother Diane and walk down the memory lane of Barbra's native Brooklyn it can be confirmed that Streisand is still at her peak after 50 years. Barbra, I love you.
